Vanilla Bean & Pistachio Ice-Cream

California Summer Dayzzzz are here and I’m daydreaming of filling the tub up halfway and ridin’ it with my surfboard… but seriously, with the mercury rising outside I needed to whip us all up a healthy dessert recipe to cool us off!

Now I went to the kitchen for some #inspo and the ingredients list was a little lack lustre. It’s mid week – I am waaaaay overdue for fresh food market run BUT I got creative and used my taste buds intuition … pistachio nuts!

Pistachio Nuts are packed with good healthy fats, protein, vitamins and minerals that help keep our heart healthy, our weight management in tack, reduce the risk of hypertension and improve our digestion … so I’m thinkin’ if Pistachio’s are so darn good for us, then I should probably include them into one of my dessert recipes, right?

Can I get a whoop whoop and a heeeeeeeck yes!?

With my taste buds desires the hubby and I got together in the kitchen, whipped out the Vitamix and blended up together some good old fashioned magic. I’ll give credit where credit is due … my hubby knows a things or two about desserts so together we created the perfect flavour. Drumroll … A Vanilla Bean & Pistachio Ice-Cream to be enjoyed outdoors in the summer sunshine!

Vanilla Bean & Pistachio Ice-Cream

Makes: 0.5 – 1L

Serves: 2

Equipment

You Will Need:

  • 12 x Medjool dates (pitted)
  • 1 cup pistachios (shelled and husks removed)
  • 1 vanilla bean scraped or 1 x tsp vanilla essence
  • tsp raw honey
  • 2-3 cups of ice

How To:

  1. Put all the ingredients into the Vitamix 2L container in the order listed and secure the lid.
  2. Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
  3. Use the tamper to effectively press the ingredients into the blades whilst processing.
  4. Blend for 30-45 seconds or until desired consistency is reached.
  5. Stop the machine and serve.

Caramel Sauce – Optional

Now this “Healthy” caramel sauce alternative is super sweet and super tasty, it’s also vegan friendly for my vegan friends out there! I quickly blended this baby up and drizzled it on the inside of my waffle cone … oh yep … this happened! I then scooped in my ice-cream and garnished it with some roughly chopped up pistachios … mouth-gasm, you’re welcome!

You Will Need:

  • Warm Caramel Sauce
  • 10-12 medjool dates
  • 3/4 cup water
  • pinch of pink rock salt
  • 1 vanilla bean scraped

How To:

  1. Put all the ingredients into the Vitamix 2L container in the order listed and secure the lid.
  2. Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
  3. Use the tamper to effectively press the ingredients into the blades whilst processing.
  4. Blend until smooth creamy consistency
