Not So Naughty Banana Cake Recipe

Before the wedding, Jase and I took on Sophie Ulanio’s Gorgeous for Good 30 day challenge to get us gorgeous and glowing from the inside out! While we were eating clean and getting lean I was constantly searching for healthy, sweet treats to satisfy my usual cookie dough & donut cravings …

That’s when I stumbled across this delicious Not so Naughty, Banana cake Recipe! I just switched out some of the ingredients for healthier alternatives according to Sophie’s guides and Bob’s your uncle – a healthy dessert alternative.

So proud of my healthy and “clean” baking efforts I packed up this beauty and took on set with me for all of the cast and crew – needless to say it wads a HUGE hit! No one could believe that it was actually good for you and that it stayed within Sophie’s clean eating guidelines … everyone on set has been asking me for the recipe so I thought there is no time like the present than to share it with you!

You Will Need:

  • 1 cup gluten-free all-purpose baking flour
  • 1 cup almond meal
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup Xyla
  • 4 free range eggs
  • 2 cups mashed banana (the riper the better)
  • 1/3 cup coconut oil
  • 1/2 cup apple butter
  • 1 tsp vanilla extract

How To:

  1. Set oven to 350 degrees F
  2. In a large bowl, combine the baking flour, almond meal, baking soda and salt.
  3. In a small bowl mash up bananas, whisk in together eggs, sugar, apple butter, coconut oil and vanilla extract.
  4. Combine wet and dry ingredients together.
  5. Coat a ring cake tin with coconut oil to avoid the mixture sticking. Put mixture into your ring cake tin and bake in the oven for 45-55 minutes or until a knife inserted into the mixture comes out clean.
  6. Remove from oven and allow to cool before removing from the pan. Place on a cooling rack and allow to cool further.
  7. Slice, Serve & Enjoy!
